What is loach soup
                        
The Chueotang (loach soup) is highly recommended as health food. ¡®Chu¡¯ from ¡®Chueotang¡¯ means Autumn. Chueotang is named after this and loach especially has better taste during the autumn. Chueotang is loach stew with full of spices. Loach does not eat anything and just sleeps during the winter and that is why loach soup is more preferred during the autumn. However, the taste differ less in present time because loach farming is so developed now.

The best advantage of eating loach is that it has a lot of protein.   Sufficient iron, calcium and vitamins can also be found it in. The secret method
                              
The medium size loach is better to broth. Pepper, red pepper, soybean paste, mint leaves and cabbage leaves helps to get rid of pungent smell as well as for better flavoring. Loach has to be brewed in high temperature in the beginning and lower temperature for long time.   Large number of loach gives more thicker flavor.
